Physically read and writes are done with sector. On file system it is done with blocks. So the minimum space a file takes up is (sector size * block size).

In the old days of SATA and IDE, interface (the connector) and the protocol were one in the same so the distinction was not explicit.
SSD will easily saturate the bandwidth of older interfaces. With the adoption of new interfaces, new bus and protocol were invented (NVMe/PCIe). And the old protocol are applied to the new interface (SATA/M.2).
